Not just Africa (this may be the only one) bur Australia, New Zealand and particularly South America-I'll forget Antarctica until things warm up.
There is:
Huntingdale - Australia
Wagga Wagga - Australia
The Vintage - Australia
The National Old - Australia
Royal Melbourne - Australia
Robina Woods - Australia
Royal Kenya - (supposed to be a real course somewhere in South Africa but I've never managed to find which)
De Zalze - South Africa
Kauri Cliffs - New Zealand
Le Touessrok - Mauritius
There are a couple more, at least in Australia and South Africa, but I didnt personally think they were good enough that I wanted to mention them.
If we stretch the limit to include a few slightly above the equator: Saigon -Vietnam and Rabat Rouge - Morocco (listed as fictional but as far as Im concerned its real).
Tara Iti was started by Duck Hook

and may come out one day
South America - sadly none

I dont even know any fictional mainland ones except for Darwin Point. John Brook's ST Lucia and Cedar Valley are probably the closest real ones.
Please do let me know if I've missed any respectable course!!
